Cath continued to improve today. The new meds are working. She even mentioned going back to work as we are "on" starting tomorrow for four days.
We had purchased a corned beef brisket to use for St Paddy's day, but we never cooked our traditional meal as Cath was under the weather. Today I put the brisket on the smoker at 225 degrees and 8 hours later we had some super tender, cut with a fork, smoked corned beef brisket. We fried up some cabbage and onions, made some biscuits, and pretended we were Irish!
It's slowly getting back to normal in the Boss Camp!
